Granola cups with berries and yogurt or peanut butter and chocolate - crunchy, delicious, gluten-free

For everyone who loves it healthy and light, but doesn't want to miss out on sweets, there are these wonderful crunchy granola cups. Ideal as a small petit for the coffee table and also as a sweet atvertiser in the morning.

 

Granola Cups are shortly baked muesli bowls that you can fill with any delicious ingredients you like. They taste particularly good with a quark-yoghurt mixture and berries.

receipe for ca 8 pieces:

  • 150 g oat flakes

  • 25 g desiccated coconut

  • 50g coconut oil

  • 75 g honey (alternatively agave syrup or maple syrup)

  • 1/2 tsp cinnamon

  • 200 g natural yogurt (or coconut yoghurt of your choice, I used 150g quark and 50g yoghurt)

  • 1 handful of mixed berries such as raspberries and blueberries

  • muffin tin


Approximately per serving:

  • 189 kcal

  • 10g fat

  • 21g carbohydrates

  • 4g protein


Preparation time:

  • 25 Minutes


And this is how it's done:


  1. Grease 8 muffin tins with a little coconut oil.

  2. Melt the coconut oil and agave syrup in a small pot over a low temperature and place in a large bowl with the oat flakes, coconut flakes and cinnamon. Mix the ingredients together thoroughly.

  3. Divide the oatmeal mixture among the eight greased muffin tins (approx. 2 tablespoons per cup) and press down with a spoon in a bowl shape so that a well is created in the middle. (Recommendation: a muffin tin instead of paper cases)

  4. Preheat the oven to 170°C and bake the granola cups in the oven for about 10-15 minutes until golden brown, remove and let cool. Carefully lift out of the muffin tin.

  5. Distribute the quark-yoghurt mixture evenly among the eight granola cups and refine with the berries.

  6. Garnish with nuts and seeds if desired.


I mixed 3 tablespoons of oat flakes and 1 tablespoon of whey protein into the quark-yoghurt mixture. The granola cups not only fill you up, but also give you a little power for the day.


Since we like to have a choice, I also spread peanut butter cream on some cups and garnished some melted chocolate and broken chocolate chips. After all, the eye is there, right?


Whether sweet or savory, rich or light - I think there is something to suit every taste. These crispy granola cups are the delicious alternative to petit fours and small cakes for all lovers of sweet treats.
