Zucchini fritters with herb quark dip - a lite and delicious treat

Lite and delicious - whether as snack or simple meal for lunch, starter or dinner, this simple vegetarian recipe is perfect. Crispy zucchini fritters with herb quark dip are a healthy, low-calorie alternative and quick to make. Ideal for fans of keto, vegetarian, healthy and gluten-free nutrition.

For the ingredients you need:

1 medium-sized zucchini

2 carrots

2 potatoes

1 egg


1-2 tablespoons potato starch

3 tablespoons oat flakes

2 tablespoons olive oil

15g grated Parmesan or shepherd's cheese


Preparation:

Grate the zucchini, carrots and potatoes. Mix the ingredients together and form into small fritters with a spoon. Heat olive oil in a pan. Fry these vegetable fritters in hot oil for about 3-4 minutes until they are golden brown on both sides. Enjoy these lightweight, delicious meal with a herb quark dip.


Depending on your wishes and taste, these crispy zucchini fritters can be supplemented with other vegetables such as cauliflower, onion or eggplant.


For the herb quark you need:

250g quark

1-2 tbsp linseed oil

5 tbsp milk or carbonated water

some salt and pepper

fresh herbs or alternatively frozen herbs


for more pizzazz and ease, use some sour cream or crème fraîche.
